
White garlic chives (韭黃), if you don't like strong spicy garlic taste, this chive is for you.
Very tender, mild, and sweet, good addition to any salad, stir fry, dumpling, and soup.

This is the first time I attempt to blanch chives, the pot I used for the experiment
was too short for the leaves to grow straight causing them to grow curly and wrinkle,

After cutting off all the chives, select another clump to blanch.
Use a tall pot to cover the chives so no light could get through,
do not peek, when the green chives next to the pot are tall enough to harvest
lift the pot to harvest the blanched chives, that's it, super easy!
You can use the same technique to blanch regular chives.
Blanching can be done in early spring when temperature is cool,
otherwise you'll cook the vegetable.

I harvest the chives first, then cover them immediately so they can regrow in darkness, thus blanching the leaves.
I have never seen white chives...it is really pretty.
Oh Norma I just love all the stuff you do/write about! I read about blanching garlic chives in Joy Larkom's book, Oriental Vegetables, but shoot, I haven't even gotten mine to grow that big yet! Maybe this year, I have lots of composted manure for the garden this year, so here's hoping!

You should be able to get a harvest from your chives the second year. Indeed, Joy Larkom's book is very thorough in explaining how to blanch chives.

Thank you. Yep, it's a bit late to blanch garlic chives in your area now, next January-February would be a good time to do it.
This motivates me to get a few clumps of garlic chives growing! The shrimp dish looks delicious.
Blanched chives? That is a new one for me. When I first saw them I thought they were some kind of bean sprout or something.
They look great against the green of the normal chives. Very pretty and no doubt delicious.
