Salted Egg Yolks 鹹蛋黃

They should have been brine for approximately 30 days,
but I forgot (as usual) and they were brine 85 days instead.
That's how come some of the yolks shrivel
and not as plum as they should be.

鴨蛋泡太久有些蛋黃都萎縮了
老人痴獃﹐又忘得一乾二淨﹐
過了兩個半月才想起﹐唉 ﹗
What can I say﹐out of sight out of mind!

They were intended for moon cakes, but I forgot and miss it. They are in the freezer now.
